Tanur oven

CONSTRUCTION, CLASS AND LUNCH

Tanur is an ancient type of oven, dated back to 3.000 years BCE in Mesopotamia. We recreate it in a modern and easy way and we bake delicious, juicy pieces of meat!

Welcome drink: Tsipouro with tomato, olives and onion.
First course: Traditional Orange salad.
Main course: Pork and chicken kontosouvli in Tanur Oven
Dessert: Traditional “spoon sweet”

OUTDOOR GASTRA

CONSTRUCTION, CLASS AND LUNCH

The traditional way of cooking outdoors or in a special corner of the house

Welcome drink: Tsipouro with tomato, olives and onion.
First course: Mushrooms fried in vinegar on the fire.
Main course: Meat with wild greens in the Gastra
Dessert: Traditional “spoon sweet”

KLEFTIKO

CONSTRUCTION, CLASS AND LUNCH

Meat roasting by burying it in the ground. 

Welcome drink: Tsipouro with tomato, olives and onion.
First course: Mushrooms fried in vinegar on the fire.
Main course: Kleftiko lamb with potatoes on ember
Dessert: Traditional “spoon sweet”

Pies - Making of the leaf and of the pie.

CLASS AND LUNCH

We will make two pies, one with spinach and one with cheese.

Traditional recipes of Epirus

CLASS AND LUNCH
Using traditional recipes, fresh ingredients and love you will discover this region’s special cultural identity.

You will be welcomed with wine and appetizers.  

Cooking lessons on signature dishes of Epirus, such as traditional pies, Kusmeri, kapama and Kopti, which is an ancestor of baklava, by arrangement according to your preferences. 

SERBETTI

CLASS AND TASTING

You will learn the technique and will and we will offer it as a dessert.

Serbeti is a sweet served in various forms: a drink made from fruit juice and spices, ice cream that has a liquid and cool texture, and a delicious candy that includes dried fruit, condensed milk and some nuts.

Accompanied by semi-sweet red wine.

We will introduce you to the local traditional cuisine and its special flavors. Epirus cuisine is part of the culture of Greece, with its

wide variety of high-quality ingredients and highly beneficial combinations which embody the knowledge of centuries.


ANCIENT GREEK AND BYZANTINE DINNER:  Dinner of six dishes with authentic, documented ancient Greek recipes.

 
  • Kykeonas (A type of drink that was drunk mainly for breakfast in ancient Greece)
  • Ancient Greek Salad with Oatmeal, Feta and Pomegranates (Approach to an Ancient Greek Recipe)
  • Fish cooked in fig leaves
  • Lamb chops with pomegranate and herb sauce, sprinkled with sesame seeds
  • Ancient Greek and Byzantine small pie, quite similar to pancakes
  • Kopton (Sweet Byzantine pie, ancestor of baklava)
Accompanied by semi-sweet red wine

Food Gathering

All the cooking techniques can be combined, depending on the season, with the gathering of wild greens that we will use in the hull, such as wild herbs, mushrooms, asparagus, etc.
Gathering and recognition of the species will be taught and supervised by an expert in the subject.
